- Gluten intolerance is a condition where there is no immune system involvement.
- Symptoms may be delayed and sometimes hidden but can be very severe with pronounced symptoms.
- True wheat allergy (coeliac disease) is less common but leads to destruction of parts of the digestive system.
- Any foods which contain gluten must be avoided; wheat is a ubiquitous ingredient and food labels must be checked thoroughly. The following are just some foods that contain wheat:

- wheat gluten
- wheat starch

Wheat or its derivatives may not be specifically described, some hidden ingredients are:
- rusk
- cereal binder
- cereal filler
- cereal protein
- modified starch
- edible starch
- food starch
